Future Food?

People used to laugh at Rene Redzepi – the chef at Noma, one of the world’s greatest restaurants. He was the champion of New Nordic Food, a movement that extolled the virtues of the Nordic larder, whatever that was. But some of his fellow restaurateurs nicknamed Noma ‘The Stinking Whale’. Or a lot worse. “There were lots of jokes about us cooking with seals and puffins. You know how chef’s talk. But that didn’t really bother me. Most of the time they were just joking. The funny thing is that what we’re doing is now influencing a lot of them. Infecting their work. That’s a nice feeling.” Pernilla Elmquist and Jens Almgren from Sweden drive Nordic Street Food — the only New Nordic Food food truck. And she’s state-of-the-art. The brand new Peugot, built in Ystad, has an electric motor which can run the fridges without having to plug in. So no stinking whale. Just the freshest ingredients from the Nordic larder.
